Enjoying time with family and friends. Harvested some parsnips and carrots for roasted vegetable combo of potatoes, carrots, and parsnips, cut in 1/4 inch slices. Brushed oil on and sprinkled with rosemary and sage. No parsley or thyme, sorry Simon and Garfinkel, and a pinch of salt. Baked 350, 25 minutes or till soft. Pretty tasty and easy.
