Why are winter greens so sweet? There must be something in the photosynthesis cycle that while a plant's growth is slow, sugars are stored rather than used up. I am going to read a book about Luther Burbank, an amazing plant propagator and hybridizer. I know he was eager to make a white marigold, but he also bred so many plants we all grow for granted in our gardens.
